Carambola Bread (star fruit) - From Tropicalia (Ft. Myers NewsPress)

Ingredients

3 eggs

2 C. sugar

1 C. oil

2 C. carambola (chopped fine)- 3 small or 2 large

2 tsp vanilla

3 C. flour

1/2 tsp baking powder

1/4 tsp cloves

1/4 tsp cinnamon

1/4 tsp salt

1 C. chopped nuts (I used pecans)

 

Directions

  • Preheat oven to 350 ° F.
  • Beat eggs until light and foamy. Add the sugar, oil, carambola and vanilla. Mix lightly, but well, by hand.
  • Combine dry ingredients, sifted together, to first mixture and blend well.
  • Stir in nuts.
  • Pour into 2 greased and floured 9 X 5 X 3 loaf pans.
  • Bake at 350 ° F for 15 minutes, lower heat to 325°F and continue to bake for 45 more minutes. Test for doneness.
  • Makes 2 loaves.
