3 lbs Pork Roast (I used a boneless loin)

1 lb dried pinto beans

1 small can chopped green chilies

2 cloves garlic (crushed)

2 Tbsp. chili powder

1 Tbsp. cumin powder

1 tsp. oregano

1 Tbsp salt


  • Put everything in the crock pot and put in enough water to just cover the meat. You may need to check this later to be sure that there is enough water (the beans absorb a ton of it).
  • Cook on high for about 8 hours.
  • We served this with tortillas for the kids to wrap. Added cheddar cheese to sprinkle on top and this was a hit!
