Cranberry Apple Muffins

2 cups flour
2 teaspoons baking powder
1/4 cup sugar
1/2 teaspoon salt
3 tablespoons melted and cooled butter
1 egg, beaten
1/2 cup buttermilk
1/2 cup apple cider
1 cup coarsely chopped cranberries
2 medium apples, cored, peeled, and chopped
Additional sugar and cinnamon

Preheat oven to 400 degrees.
Grease 12 muffin cups.
Whisk the flour, baking powder, sugar, and salt in a bowl briskly.
Whisk the cooled butter, the egg, buttermilk, and cider in a small bowl until well blended.
Mix into the dry ingredients until just moistened.
Fold in the apples and cranberries.
Spoon into the muffin cups and sprinkle the sugar and cinnamon.
Bake for 15-20 minutes or until a toothpick inserted in the center comes clean and the muffins are a golden brown.

Makes 12 muffins.

Prep Time: 10 minutes
Cooking Time: 15 minutes

  2. What a great autumn combination. My girls will love these and I am going to make them as soon as they finish off the blueberry ones I made last night! Wish I had seen this one first.
