Marinated Grilled Flap Steak (Also known as Skirt Steak)

Ingredients (4 People)
  • 2-2 1/2 lbs Flap Steak separated into 4 servings (see ****)If you cannot get Flap Steak Flank Steak will work as well.
  • 4 oz. Soy Sauce
  • 4-6 cloves Minced Fresh Garlic
  • 1/4 C Olive Oil
  • 1 Tbsp Fresh Ground Black Pepper
  • 1/2 Tbsp Dried Oregano

Directions

  • Mix all ingredients but the Flap Steak.
  • Add Flap steak and allow to marinate for up to 3 hrs but 1 hr works just as well!
  • Cook on hot grill to Medium Rare to Medium at most.
  • Slice each portion about 1/8 inch to 1/4 inch thick against the grain (think fajita meat) and serve.

***Flap Steak has a very visible grain (direction of the muscle fiber). Cut portions with this grain before marinating and cooking.
