Not Your Granny's Pumpkin Muffins


2-1/4 cups all purpose flour

1 cup whole wheat flour

2 tsp baking soda

1 tsp ground nutmeg

1/4 tsp ground ginger

1 tsp ground cinnamon

1/4 tsp ground cloves

1/4 tsp pumpkin pie spice

1-1/2 tsp salt

2-1/2 cups packed brown sugar

2 cups of pumpkin puree

1 cup vegetable oil

2/3 cup of water

4 eggs


2 (8 ounce) pkgs of cream cheese

1/2 cup butter

2 cup sifted confectioners sugar

1 tsp vanilla

1 tsp pumpkin pie spice

1/4 tsp ground ginger

1/8 tsp ground allspice

1/4 tsp ground cinnamon

1/4 tsp ground nutmeg and a bit more for sprinkling on top!


  • Preheat oven to 350°
  • Grease and flour 12 regular size muffin cup (or use paper cups) and one regular size loaf pan (you could also make 12 more muffins if you choose)
  • Measure flour, baking soda,salt and spices into a large bowl. Stir to blend all of these ingredients
  • Add pumpkin, water, salad oil and eggs.
  • Beat with an electric beater until well mixed.
  • Pour the batter into the prepared pans.
  • The loaf will take about 1 hour to cook but the muffins should be checked at about 30 minutes


  • In a medium bowl, cream together the cream cheese and butter until creamy.
  • Mix in the vanilla, and all of the spices. Gradually stir in the confectioners' sugar.
  • Store in the refrigerator after use
