Orange Blueberry Muffins


1/2 cup rolled oats

1/2 cup orange juice

1/2 tsp grated orange zest

1/2 cup vegetable oil (or canola)

2 eggs (beaten)

1 cup all purpose flour

1/2 cup whole wheat flour

1/2 cup sugar

2 tsp baking powder

1/2 tsp salt

1/4 tsp baking soda

1 1/2 cup fresh blueberries


  • Preheat oven to 400°
  • Mix the oats, orange juice, and zest together in a bowl. Add the oil and eggs and set aside.
  • In another bowl stir together the flours, sugar, baking powder, salt and baking soda.
  • Add the oat mixture and stir lightly.
  • Gently fold in the blueberries.
  • Spoon the batter into a paper lined muffin tin filling about 2/3 full.
  • Baked in preheated 400° oven for about 15-18 minutes or until lightly browned.
  • This makes 12 muffins.
