Simple Black Beans

Ingredients

1 lb. dried black beans (about 2 1/3 cup), picked over and rinsed but not soaked

1 medium onion, finely chopped

2 garlic cloves, minced

3 Tbsp olive oil

8 cups of water

1 1/2 tsp salt

1/2 tsp oregano

1 tsp cumin

1 tsp garlic powder

1 Tbsp red wine vinegar

Directions

  • Bring black beans, onion, garlic, olive oil, water, 1/2 tsp salt, oregano, cumin and garlic powder to a boil in a large, heavy bottomed pot.
  • Reduce the heat and simmer covered until beans are tender (about 1 1/2 to 2 hrs)
  • If the beans are too thick for your liking add additional water. If they are too thin cook uncovered until the thickness has improved.
  • Add the red wine vinegar and the remaining salt. Allow to cook for about 10 more minutes.
  • Serve over rice or on its own. We like it over rice with various toppings: chopped onion, jalapeno, and pico do gallo.
