Zucchini Fritters


4 zucchini (grated)

2 eggs

3-4 Tbsp All Purpose Flour (this depends on how wet the zucchini is)

1 Tbsp granulated garlic or garlic powder

1 1/2 Tbsp kosher salt

2 tsp black pepper


  • Mix all the ingredients together
  • Heat about 1/2 inch of Canola Oil in a large skillet. We use a cast iron skillet but you can also use a non-stick one.
  • When the oil is heated add the zucchini mixture by using a 1.4 cup measure scoop. Flatten the tops down a bit.
  • Cook unit golden on one side and cook through on the other side.
